Cooking classes usually start at 9:00 AM with a tour of the local market, where together with the respective students do all the ingredient shopping (optional). At the beginning of the tour, your guide will review the menu for the day.

After visiting the market we go to the chef's home to cook. Your instructor will guide you through the recipes step by step. The most famous are dishes Pepian, Jocon, and Hilacha. Vegetarian participants can eat delicious chile rellenos.

Once you're done cooking you'll sit down to eat while your cooking instructor tells you more about the origin of these traditional dishes. The recipes we use are passed from generation to generation. At the end of the class, each student will receive a copy of the recipes. Your tour concludes with dessert.
